The case of yellow mealworm oil, monitoring, and rapid analysis all in the July/Aug issue of Inform

Insect oils and fats are already used as ingredients in feed. The July/August issue of Inform considers whether dry fractionation could make insect oils more versatile for food applications. This issue also reviews technologies based on vibrational spectroscopy that can continuously monitor edible oil parameters on the production line, and takes a look at matrix-assisted laser desorption/ionization mass spectrometry (MALDI MS) and its applications in edible lipids analysis.
